Leek Soup (Leeks, Lentils, Oats, Kombu)

Amount Measure Ingredient -- Preparation Method

6 large leeks

1/2 cup red lentils or split peas

1/4 cup rolled oats

1 tablespoon sesame or olive oil

1 strip kombu

6 cups water

3 tablespoons barley miso

or 1 teaspoon sea salt

1 tablespoon parsley -- chopped

 

1. Wash leeks well under running water and cut into 24 mm long pieces.

 

2. Heat the oil in a soup pot.

 

3. Add leeks and sauté for 2 to 3 minutes.

 

4. Add lentils or split peas, rolled oats, kombu and water.

 

5. Bring to a boil and simmer gently for 45 minutes.

 

6. Add miso or salt and simmer for another 5 to 10 minutes.

 

7. Garnish with parsley and serve.
