Vegetable and Barley Soup

Amount Measure Ingredient -- Preparation Method

1/2 cup pearl barley

3 cups water

1 tablespoon oil

1 medium onion -- chopped

1 clove garlic -- crushed

2 medium carrots -- chopped

1 medium potato -- chopped

1 stick celery -- chopped

1 3/4 cups canned tomatoes

2 each vegetable stock cube (or 1 large) -- crumbled

2 tablespoons chopped fresh parsley

 

 

1. Soak barley in the water overnight.

 

2. Heat oil in large saucepan, add onion and garlic, stir over medium heat for

about 2 minutes or until onion is soft.

 

3. Add carrots, potato, celery, undrained crushed tomatoes, stock cube,

undrained barley and water mixture. Bring to boil, reduce heat, cover, simmer

for about 15 minute or until vegetables are tender.

 

4. Stir in the parsley just before serving.

Serves 4.
