Soy Tollhouse Cookies

1/2 cup soy flour

1/2 cup whole wheat pastry flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/2 cup sugar or light granulated cane juice

1/3 cup soft soy margarine

1/3 cup soy milk

1 teaspoon vanilla extract

1/3 cup soy espresso chocolate chips

 

Preheat the oven to 350F and line two cookie sheets with parchment paper.

 

In a mixing bowl, combine the soy flour, whole wheat pastry flour, baking soda,

and baking powder.

 

In an electric mixer, cream the sugar and margarine until smooth; add the soy

milk and vanilla. Add to the flour mixture and mix until the dough is stiff.

 

Fold in the chocolate chips and roll the dough out onto a floured surface. Form

into two logs and cut them into 1/2-inch slices. Place the slices evenly onto

the lined cookie sheets.

 

Bake for 12 to 15 minutes, or until slightly browned.
