Guest guest Posted January 31, 2001 Report Share Posted January 31, 2001 Vinaigrette recipe will follow- * Exported from MasterCook * " Little Ears " with Smoked Tempeh and Vegetables Recipe By :1001 Low-Fat Vegetarian Recipes - Sue Spitler Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 8 oz packages tempeh 3 cups broccoli florets -- steamed 1 medium yellow, or green bell pepper -- sliced 12 cherry tomatoes -- halved 2 cups " little ears, " or small pasta shells -- cooked Mustard Seed Vinaigrette Smoke tempeh according to directions; cut tempeh into 3/4-inch cubes. Combine tempeh, vegetables, and pasta in serving bowl; pour Mustard Seed Vinaigrette over and toss. Tofu and tempeh can be smoked on a covered grill. Arrange hot charcoals around edges of grill; place a shallow pan of water in center. Sprinkle hot coals with mesquite chips that have been soaked in water and well drained. It can also be smoked on top of the range. Sprinkle 2 to 3 tablespoons mesquite smoking bits (very small mesquite chips, available in canisters at hardware and home improvement stores and some large supermarkets) or mesquite shavings in bottom of large Dutch oven. Place tempeh or tofu on rack and cover; heat over high heat 5 minutes. Lift lid just enough to make sure pan is filled with smoke; reduce heat to medium-low and cook, covered, 20 to 30 minutes. Description: " Smoked tofu can be used in place of the tempeh, if desired. Smoked tofu can also be purchased in health food and specialty stores.
