Guest guest Posted January 30, 2001 Report Share Posted January 30, 2001 * Exported from MasterCook * Poblano Chile Soup Recipe By :1,001 Low Fat Vegetarian Recipes, Sue Spitler Serving Size : 6 Preparation Time :0:00 Categories : 1,001 Low Fat Veg Recipes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- vegetable cooking spray 2 medium onions -- chopped 4 medium poblano chiles -- seeds & veins discarded, chopped 1/2 small jalapeno chile -- (to 1) seeds & veins discards, chopped 3 1/2 cups Basic Vegetable Stock 3 cups tomato juice 1/2 teaspoon ground cumin 1/2 cup water -- (to 1 cup) divided salt & pepper to taste minced cilantro for garnish Spray a large saucepan with cooking spray; heat over medium heat until hot. Saute onions and chiles until onions are tender, about 5 minutes. Add stock, heat to boiling. Reduce heat and simmer, covered, until chiles are very tender, about 5 minutes. Process broth mixture in food processor or blender until smooth; return to saucepan. Add tomato juice, cumin, and enough water for desired consistency; heat to boiling. Reduce heat and simmer, uncovered, 10 minutes. Season to taste with salt & pepper. Serve soup in bowls; sprinkle with cilantro.
