Tofu Chocolate Marble Bars

Crust

3 tablespoons soft soy margarine

1/2 cup graham cracker crumbs

Filling

6 ounces soft tofu

1/4 cup sugar or light granulated cane juice

2 ounces soy cream cheese

1 teaspoon almond extract

1 tablespoon unsweetened cocoa powder

Topping

1/2 cup Soy Chocolate Ganache

 

Preheat the oven to 350F. In a mixing bowl, combine the margarine and graham

cracker crumbs, and press the mixture into an 8 1/2 x 5 1/2 x 1-inch disposable

pan.

 

In a blender or food processor, puree the tofu until smooth. Add the sugar, soy

cream cheese, and almond extract, processing until smooth. Scrape down the

sides as necessary.

 

Transfer half of the tofu mixture into another bowl and set aside.

 

Add the cocoa to the remaining half of the tofu mixture, process until

thoroughly mixed. Pour the plain tofu mixture into the prepared pie crust, and

then with a spoon, blend in the chocolate tofu mixture in a marbleized pattern.

 

Bake for 30 minutes. Remove from the oven and cool for 1 hour.

 

Prepare the Soy Chocolate Ganache and top immediately. Refrigerate for 4 hours

or overnight.

 

Description:

mixture, swirl it around to make your own personal design. "
