Cardamom Anise Tofu Squares

10 ounces extra-firm tofu

1/2 cup sugar or light granulated cane juice

1 teaspoon ground cardamom

2 teaspoons anise extract oor anisette liqueur

 

Preheat the oven to 350F.

 

Drain the water from the tofu and cut into 6 slices the long way and then across

to form 12 squares.

 

Place the tofu slices on an ungreased cookie sheet and bake for 20 minutes.

 

Remove the tofu from the oven and transfer to another cookie sheet or glass

baking dish. Set the pieces far apart for coating. Cool completely.

 

In a small saucepan, on high heat, bring the sugar to a boil, stirring

constantly with a metal wire whisk to avoid lumps.

 

Add the cardamom and anise and cook for 30 more seconds.

 

Remove from the heat and coat each piece of tofu with the sugar mixture. Let

cool and harden. Serve immediately.
