Soynut Carrot Chocolate Haystacks

1 1/2 cups semisweet soy chocolate chips

1/2 cup soynuts

1 cup shredded carrots

 

Line a cookie sheet with parchment paper and set aside.

 

In a small saucepan, over medium heat, melt the chocolate chips, whisking

constantly until smooth.

 

Add the soynuts and carrots, quickly toss in the melted chocolate, and spoon out

12 portions onto the prepared cookie sheet. Cool completely and serve.

 

These can be stored in a plastic container for 5 days.
