Guest guest Posted January 30, 2001 Report Share Posted January 30, 2001 * Exported from MasterCook * Gazpacho Recipe By : 1,001 Low-Fat Vegetarian Recipes by Sue Spitler, page 71 Serving Size : 6 Preparation Time :0:00 Categories : Soups And Stews Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 5 large tomatoes -- divided 2 cups reduced-sodium tomato juice 2 cloves garlic 2 tablespoons lime juice 1 teaspoon dried oregano leaves 1 small seedless cucumber -- coarsely chopped 1 cup chopped yellow bell pepper 1 cup chopped celery 6 thinly sliced green onions and tops -- divided 2 tablespoons finely chopped cilantro Salt and pepper -- to taste Hot pepper sauce -- (optional) ***AVOCADO SOUR CREAM*** 1/2 medium avocado -- peeled pitted and chopped 1/4 cup fat-free sour cream 2 tablespoons skim milk Salt and white pepper -- to taste 6 side-dish servings (about 1 1/4 cups each) Gazpacho is Spanish in origin but popularly served throughout Mexico and South America. Easy to make and served cold. This is a wonderful soup to keep on hand in summer months. 1. Cut tomatoes into halves; remove and discard seeds. Chop tomatoes, reserving 1 cup. Process remaining tomatoes, tomato juice, garlic, lime juice, and oregano in food processor or blender until smooth. 2. Mix tomato mixture, reserved tomatoes, cucumber, yellow bell pepper, celery, 5 green onions, and cilantro in a large bowl; season to taste with salt and pepper. Refrigerate until chilled, 3 to 4 hours. 3. Serve soup in chilled bowls; top each with a dollop of Avocado Sour Cream and sprinkle with remaining green onion. Serve with hot pepper sauce if desired. Avocado Sour Cream: Process all ingredients in food processor until smooth; season to taste with salt and white pepper. Makes about 2/3 cup.
