Guest guest Posted January 30, 2001 Report Share Posted January 30, 2001 * Exported from MasterCook II * Leeks Braised w/Carrots & Tomatoes- Apulia Recipe By : Italian Vegetarian Cooking/Paola Gavin Serving Size : 4 Preparation Time :0:00 Categories : Vegetables Italian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 leeks 3 tablespoons olive oil 2 small carrot -- diced 6 ripe plum toatoes, peeled, seeded -- chopped salt freshly ground black pepper Trim away the root ends of the leeks. Cut leeks lengthwise into halves and carefully wash away any dirt that collects between the leaves. Cut into 2-inch lengths. Use the whole leek, including the dark green parts. Heat the olive oil in a large saucepan and cook the leeks and carrots, covered, over moderate heat for 5 minutes. Add the tomatoes, cover, and simmer for 30 minutes. Season with salt and pepper and serve at once. Serve 4 to 6. - - - - - - - - - - - - - - - - - - NOTES : This is a light and delicious combination.
