Guest guest Posted January 29, 2001 Report Share Posted January 29, 2001 Recipe for crust to follow- * Exported from MasterCook * Tofu Lemon Tartlets Recipe By :Soy Desserts - Patricia Greenberg Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 4-inch Soynut Tartlet Shells 14 ounces firm tofu 1/3 cup sugar or light granulated cane juice juice and zest of 1 large lemon Prepare the tartlet shells and set aside. In a blender or foo processor on medium speed, puree the tofu until smooth. Add the sugar and continue blending until thoroughly combined. Scrape down the sides of the blender if necessary. Turn the blender or food processor on high and add the lemon juice and zest. Blend for 20 seconds. Chill the lemon filling for 2 hours, then pour the mixture into the prepared tartlet shells and serve immediately. Description: " These lemon tartlets look like they're fillled with authentic lemon curd, and their appearance fooled everyone at a birthday party I threw for my brother. The crust has a crunchy soynut flavor, and the custard filling is light and refreshing.
