Potatoes w/Walnuts - Liguria

Amount Measure Ingredient -- Preparation Method

2 pounds waxy potatoes

2 tablespoons olive oil

2 tablespoons butter

2 cloves garlic -- crushed

1 teaspoon fresh basil or 1/4 tsp dried

1 handful fresh parsley -- chopped

1 small onion -- finely chopped

grated rind of 1 lemon

salt

freshly ground black pepper

juice of 1/2 lemon

1/4 cup shelled walnuts, ground in the blender

 

Peel the potatoes and cut into slices 1/8 " thick. Heat the olive oil

and butter in a large frying pan and cook the garlic, basil, parsley,

onion, and lemon rind over moderate heat for 5 minutes. Add the

sliced potatoes, and sprinkle with salt and black pepper. Continue to

cook until the potatoes are golden on both sides. Sprinkle with lemon

juice and ground walnuts. Toss lightly and serve at once.

 

Serves 4 to 6.
