Guest guest Posted January 30, 2001 Report Share Posted January 30, 2001 * Exported from MasterCook II * Potatoes w/Walnuts - Liguria Recipe By : Italian Vegetarian Cooking/Paola Gavin Serving Size : 4 Preparation Time :0:00 Categories : Italian Potatoes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 pounds waxy potatoes 2 tablespoons olive oil 2 tablespoons butter 2 cloves garlic -- crushed 1 teaspoon fresh basil or 1/4 tsp dried 1 handful fresh parsley -- chopped 1 small onion -- finely chopped grated rind of 1 lemon salt freshly ground black pepper juice of 1/2 lemon 1/4 cup shelled walnuts, ground in the blender Peel the potatoes and cut into slices 1/8 " thick. Heat the olive oil and butter in a large frying pan and cook the garlic, basil, parsley, onion, and lemon rind over moderate heat for 5 minutes. Add the sliced potatoes, and sprinkle with salt and black pepper. Continue to cook until the potatoes are golden on both sides. Sprinkle with lemon juice and ground walnuts.
