Tart Tatin

1 cup cake flour

2 tablespoons sugar

3 tablespoons margarine -- (cold)

2 tablespoons ice water -- (2 to 3)

5 cups Granny Smith apples -- (about 2 1/2 lbs.) peeled cored

and cut into 1/2-inch slices

1/2 cup sugar

1/4 teaspoon ground nutmeg

1 tablespoon lemon juice

1/4 cup sugar

2 tablespoons margarine

 

Combine cake flour and sugar in medium bowl. With pastry blender or 2

knives, cut in margarine until mixture resembles coarse crumbs. Sprinkle

in water, 1 tablespoon at a time, mixing lightly with a fork after each

addition until pastry just holds together. Cover dough and refrigerate 15

minutes. On lightly floured surface, roll pastry into 11-inch circle;

cover loosely with plastic wrap and set aside.

 

Toss apples with combined 1/2 cup sugar and nutmeg; sprinkle with lemon

juice. Set aside. Place 1/4 cup sugar in 10-inch skillet with oven-proof

handle. Cook over medium heat until sugar melts and is golden brown,

about 5 minutes, stirring occasionally (watch carefully-the sugar can burn

easily). Add apple mixture and margarine; cook 5 minutes or until apples

are just tender, stirring occasionally. Remove from heat.

 

Arrange apples in skillet so they are slightly mounded in the center.

Place pastry on top of apples; tuck in edges. Cut slits in pastry to

allow steam to escape. Bake at 425ºF 20 to 25 minutes or until lightly

browned. Invert onto serving platter. Serve warm or at room temperature.
