Guest guest Posted January 30, 2001 Report Share Posted January 30, 2001 * Exported from MasterCook II * Baked Pea Omelet - Sardinia Recipe By : Italian Vegetarian Cooking/Paola Gavin Serving Size : 1 Preparation Time :0:00 Categories : Eggs Italian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 tablespoons olive oil 1 small onion -- chopped 1 handful parsley -- finely chopped 2 cups shelled fresh peas 4 eggs 1/4 cup freshly grated Pecorino cheese salt freshly ground black pepper 1/2 cup fresh whole wheat bread crumbs, soaked in 1/4 cup milk Heat the olive oil in a frying pan and cook the onion and parsley over moderate heat for 3 minutes. Add the peas and 2 to 3 Tbsp water and simmer, covered, for 15 minutes, or until the peas are tender. Beat the eggs in a mixing bowl with the grated cheese. Season with salt and black pepper. Stir in the bread crumbs and the onion and pea mixture. Pour into a well-oiled shallow baking dish. Bake in a preheated 375 degree oven for 25 to 30 minutes, or until the top is golden and the center is set. Serve at once.
