Guest guest Posted January 29, 2001 Report Share Posted January 29, 2001 My copy of the book is copyrighted in 1997. * Exported from MasterCook * Curried Soybeans and Potatoes Recipe By :1,001 Low-Fat Vegetarian Recipes - Sue Spitler Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- garlic-flavored vegetable cooking spray 1 cup chopped onion 1 medium red bell pepper -- chopped 2 teaspoons minced garlic 1 jalapeno chili -- finely chopped 2 teaspoons ground turmeric 1 teaspoon ground cumin 1/2 teaspoon ground coriander 1/4 teaspoon ground ginger 4 medium russet potatoes -- peeled, cubed 2 1/2 cups cooked soybeans or canned soybeans -- rinsed and drained 1 medium tart cooking apple -- peeled, cored, and cubed 1 cup water 2 teaspoons lemon juice 2 tablespoons finely chopped cilantro salt and pepper to taste Spray large saucepan with cooking spray; heat over medium heat until hot. Saute onion, bell pepper, garlic, and jalapeno until tender, about 5 minutes. Stir in spices; cook over medium-low heat 1 to 2 minutes, stirring constantly so spices do not burn. Add potatoes to saucepan; cook 5 minutes, stirring frequently. Add soybeans, apple, and water; heat to boiling. Reduce heat and simmer, covered, 20 minutes. Simmer, uncovered, until almost dry, 5 to 10 minutes. Stir in cilantro and lemon juice; season to taste with salt and pepper.
