Cashew Soy Cream Frosting

1/4 cup cashews

4 ounces regular tofu

4 ounces soy cream cheese

3 tablespoons sugar or light granulated cane juice

 

In a food processor, chop the cashews to a finely ground consistency.

 

Add the tofu, soy cream cheese, and sugar and puree until smooth. Refrigerate

until ready to use.

 

This frosting will keep, wrapped, for 5 days.
