Guest guest Posted January 29, 2001 Report Share Posted January 29, 2001 * Exported from MasterCook * Banana Soy Chocolate Chip Walnut Squares Recipe By :Soy Desserts - Patricia Greenberg Serving Size : 16 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup whole wheat pastry flour 1 cup soy flour 2 teaspoons baking powder 1/2 teaspoon salt 1/2 cup sugar or light granulated cane juice 2 very ripe bananas -- mashed 1/2 cup soybean oil 1/2 cup soy milk 1/4 cup semisweet soy chocolate chips 1/4 cup chopped walnuts Preheat the oven to 350F and grease an 8 x 8-inch square pan or line the pan with parchment paper. In a large bowl, combine the whole wheat pastry flour, soy flour, baking power, salt, and sugar. In a separate bowl, combine the bananas, soybean oil, and soy milk and mix thoroughly. Add the banana mixture to the dry mixture and stir until combined. Fold in the chocolate chips. Pour the batter into the greased pan and sprinkle the walnuts on top. Bake for 40 minutes, or until an inserted toothpick comes out clean. Cool the cake to room temperature before slicing.
