Yellow Salsa Rice

1 14 1/2 ounce can vegetable broth -- (reduced-sodium)

1/2 teaspoon ground turmeric

1 cup long-grain rice

1/4 cup salsa -- (medium or hot)

1 medium tomato -- chopped

salt and pepper -- to taste

cilantro -- finely chopped

or parsley -- as garnish

 

Heat broth and turmeric to boiling in medium saucepan; stir in rice and

salsa. Reduce heat and simmer, covered, until rice is tender and liquid

absorbed, 20 to 25 minutes; stir in tomato during last 5 minutes of

cooking time. Season to taste with salt and pepper.

 

Spoon rice into serving bowl; sprinkle with cilantro.

 

6 side-dish servings (about 2/3 cup each). Per Serving: Calories: 130; %
