Karen H. * Exported from MasterCook * Portobello Mushrooms Grilled with Chili Paste Recipe By :1001 Low-Fat Vegetarian Recipes, by Sue Spitler with Linda R Yoakam, page 290 Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 12 large Portobello mushrooms -- (about 5-inches diameter) Chili Paste -- (recipe follows) Yellow Salsa Rice -- see recipe Zucchini from Puebla -- see recipe Chili Paste: vegetable cooking spray 2 dried ancho peppers 2 dried pasilla peppers 4 cloves garlic -- minced 1/2 teaspoon salt 2 tablespoons white wine vinegar water For Mushrooms: Rub gill sides of mushrooms with Chili Paste. Grill, flat sides down, over medium-hot coals until tender, 8 to 10 minutes. Or roast in oven at 425ºF until tender, 20 to 30 minutes. Serve with Yellow Salsa Rice and Zucchini from Puebla. For Chili Paste: Spray medium skillet with cooking spray; heat over medium heat until hot. Cook chilies over medium heat until softened, 1 to 2 minutes. Remove and discard stems, seeds, and veins. Process chilies, garlic, salt, and vinegar in food processor or blender, adding a very small amount of water, if necessary, to make a smooth paste.
