Guest guest Posted January 28, 2001 Report Share Posted January 28, 2001 * Exported from MasterCook * Spaghetti Squash with Mushroom Sauce Recipe By :Melissa's Recipes Serving Size : 4 Preparation Time :0:00 Categories : Side Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 pounds Spaghetti Squash -- halved lengthwise, seeded 1 tablespoon unsalted margarine 1/2 pound button mushrooms -- quartered 3 green onions -- chopped fine 1/2 teaspoon dried thyme -- crumbled 1/2 teaspoon dried marjoram -- crumbled 1 dash black pepper 1/2 cup low-sodium broth vegetable or chicken flavored 1 tablespoon minced parsley In a 4-quart Dutch oven, bring to a boil enough unsalted water to cover the squash. Add the squash, cut side up, and cook covered over moderate heat for 20 minutes or until the squash is fork-tender. Meanwhile in a heavy 10 " skillet, melt the margarine over moderate heat; add the green onions and cook uncovered until soft, about 5 minutes. Stir in the mushrooms, thyme, marjoram, and pepper; cover and cook for 5 minutes. Add the broth and cook uncovered, stirring occasionally until most of the broth has evaporated (about 5 minutes). As soon as the squash is done, lift it from the oven and scrape the spaghetti like strands with a fork onto a platter. Ladle the mushroom sauce on top, sprinkle with parsley and serve.
