Spinach and Spaghetti Squash Saute

Amount Measure Ingredient -- Preparation Method

2 teaspoons olive oil

1 small piece fresh ginger -- finely chopped

2 cloves garlic -- minced

1 medium onion -- finely sliced

1/2 teaspoon curry powder -- to taste (1/2 to 1)

1 bunch fresh spinach -- stemmed and rinsed

left with water clinging, coarsely chopped

1 medium spaghetti squash -- boiled or steamed

seeded and peeled

Salt and pepper -- to taste

1 tablespoon raisins -- optional

1 tablespoon chopped toasted almonds -- optional

4 sprigs fresh cilantro -- finely chopped

 

In a large skillet, heat oil and add ginger, garlic, onion and curry powder.

Cook on medium heat until onions begin to soften, about 2 to 3 minutes.

 

Add spinach, toss to combine with onion mixture. Cover and let cook until

spinach begins to wilt. Add squash, salt, pepper, and raisins. Mix and continue

to cook until spinach is wilted. Add the remaining ingredients. Toss, taste for

seasoning. Serve with rice.

NOTES : This easy saute can be done in a nonstick skillet. To cook the squash,

use the microwave oven, or boil or steam it stove top until just soft. Cut the

cooked squash in half, remove the seeds and lift out the strands or scrape them

out with a fork, leaving the hard outer shell. Curry powders vary in flavor and

intensity. Definitely taste the cooked dish and adjust the seasoning according

to your taste. Serve the dish with rice and a big salad for a vegetarian meal,

or use the saute as a side dish with fish, meat or poultry. The dish tastes

terrific without the optional ingredients, though they do add depth to the dish.
