Here are two more menus from Still Life with Menu. All of the recipes

except the Chinese Broccoli Salad and the Strawberry Meringue Pie were

posted before and can be found by using the search engine at

Veg-Recipes . I will post the two missing recipes

This meal contains a wide spectrum of textures. The soup is creamy,

slightly dense and smooth: the salads have many different kinds of crunch,

plus soft, absorbent black mushrooms. I took the liberty of adding

Strawberry Meringue Pie to this otherwise ethnically correct menu. With

its ethereal texture and bright, positive flavor, it is the perfect

counterpoint to the deeply, darkly seasoned dishes.

 

3 DAYS AHEAD: make pie crust

 

2 DAYS AHEAD: soak black mushrooms (step 1 of soup) / cook bean thread

noodles; store in water in refrigerator / for broccoli salad: do step 1,

cover tightly and refrigerate: clean and cut broccoli; toast walnuts

 

1 DAY AHEAD: assemble and puree soup / assemble Cold Chinese Mushrooms with

Bean Thread Noodles / steam broccoli; prepare and marinate mushrooms / for

the pie: separate eggs; clean and cook strawberries (step 2); get other

ingredients measured and ready

 

SAME DAY: make pie filling and complete the pie / reheat soup and prepare

garnishes / assemble broccoli salad (at the very last minute!)

Chinese Vegetable Soup

Cold Hunan Noodles With Sesame And Greens

Most of the vegetables in this very satisfying two dish meal are

perennially available, so you can serve it year-round. Mandarin oranges

are one of the few fruits that taste good canned. Drain off the syrup,

rinse. and serve them in a bowl with a few ice cubes.

 

Almost everything for this meal can be done ahead. All you have to do the

same day is open the can of oranges and complete and heat the soup.

 

3 DAYS AHEAD: cook noodles for salad: store in water in the refrigerator

 

2 DAYS AHEAD: cut vegetables for soup / steam greens for salad

 

1 DAY AHEAD: do steps 1 and 2 of the soup / assemble salad

 

SAME DAY heat and complete soup / prepare oranges
