Zucchini Pancakes with Mint and Feta Cheese

Amount Measure Ingredient -- Preparation Method

2 1/2 pounds zucchini -- salted

2 egg

1/2 cup feta cheese -- crumbled

salt and pepper

1/2 cup bread crumbs

1/4 cup flour

1 bunch scallion

1 tablespoon garlic -- minced

1/2 cup chopped fresh parsley

3 tablespoons chopped mint

 

Rinse the squash. Using your hands or dish towels, squeeze out the excess

liquid. Set aside. MIx all the other ingredients except the olive oil

together. Preheat the oven to 200 F. Add the zucchini to the other

ingredients.

 

Heat 2 tablespoons of olive oil in a large skillet, drop in the batter,

using 1/4 cup or less at a time. Fry over medium heat until golden brown on

the botton, about 4 minutes. Turn and brown the second side.

 

Keep finished pancakes warm in the oven while you prepare the others.
