Looking for enchilada recipe/Touchdown Taco Dip

We have been semi-vegetarians for awhile, and my husband decided to make

a New Year's resolution not to eat any meat. So I have been adding to my

repertoire of vegetarian dinners.

 

I would love to find a recipe for enchiladas (or an enchilada casserole).

I'm not a bean lover (yet), so I was hoping to find a recipe with tofu,

not primarily beans. It needs to be low-fat. Any ideas?

Touchdown Taco Dip

Amount Measure Ingredient -- Preparation Method

1 can refried beans -- (16 oz.)

8 ounces cream cheese -- softened

1 cup sour cream

2 tablespoons taco seasoning mix

2 cloves garlic -- pressed

1 medium tomato -- chopped

1/4 cup green onions -- (1 small bunch)

1/4 cup chopped pitted black olives -- (1 small can)

2 tablespoons fresh cilantro -- minced

1/2 cup shredded cheddar cheese

additional sour cream -- for garnish

tortilla chips

 

Preheat oven to 350°F. Spread refried beans over bottom of 11 " round

baking dish. In a medium-sized bowl, combine cream cheese, sour cream and

taco seasoning. Press garlic into bowl using garlic press; mix well.

Spread over beans. Sprinkle cheese over top.

 

Bake 15-18 minutes or until hot. Chop olives.. Snip cilantro. Chop tomato

and slice green onions. Sprinkle tomato, onions, olives and cilantro over

dip. Garnish with additional sour cream, if desired. Serve with tortilla

chips or fresh cut vegetables.
