Tofu Key Lime Tartlets

6 3-inch graham cracker tart shells

12 ounces firm tofu

1/3 cup powdered sugar

2 tablespoons Key lime juice

zest of 1 large lime

 

Prepare the tart shells according to the recipe or use storebought crusts.

 

In a food processor, puree the tofu until smooth, about 3 minutes.

 

Add the powdered sugar and Key lime juice. Continue to puree until smooth.

 

Pour into the individual tart shells and garnish each one with lime zest.
