Simple Miso-Ginger Noodles

8 ounces udon or soba or quinoa noodles

OR any long flat noodle

1 tablespoon dark sesame oil

1 large onion -- chopped

1 clove garlic -- minced, up to 2

3 tablespoons miso -- to taste, up to 4

2/3 cup water or unsalted vegetable stock

1 teaspoon grated fresh ginger -- to taste, up to 2

1 pinch cayenne pepper -- optional

Thinly sliced scallion for garnish

 

4 servings

 

Here's a nice side dish to serve with a bountiful vegetable stir-fry.

 

Cook the noodles in plenty of rapidly simmering water until al dente, then

drain.

 

Meanwhile, heat the oil in a medium saucepan. Add the onion and garlic,

and sauté over medium-low heat until golden. Add the miso, water, ginger,

and optional cayenne. Heat gently, but don't boil, as this destroys the

beneficial enzymes found in miso.

 

In a serving bowl, combine the cooked noodles and the sauce, and toss

together. Garnish with scallion and serve at once.
