Guest guest Posted January 25, 2001 Report Share Posted January 25, 2001 * Exported from MasterCook * Black Beans Recipe By : One Dish Vegetarian by Maria Robbins, page 168 Serving Size : 1 Preparation Time :0:00 Categories : Beans And Legumes Info/Tips Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound dried black beans -- (2 cups) 2 tablespoons olive oil 1 large onion -- diced 3 garlic cloves -- minced 2 tablespoons toasted -- ground cumin 1 tablespoon salt -- or to taste about 4 1/2 cups cooked beans 1. Pick over the beans to remove any foreign objects. Wash the beans and soak them in water for at least 6 hours or overnight, changing the water several times. 2. Heat the oil in a large heavy pot over low heat. Add the onion and garlic and cook, stirring, for 5 minutes, until the onion has wilted. 3. Drain the beans and add them to the onion and garlic, along with enough water to cover by 2 inches. Add the cumin and bring to a boil. Reduce heat to low and simmer, uncovered, for 3 hours or longer, until the beans are very tender. Stir the beans from time to time and make sure that there is enough liquid to cover the beans.
