Guest guest Posted January 25, 2001 Report Share Posted January 25, 2001 * Exported from MasterCook * Balsamic Vinaigrette Recipe By : One Dish Vegetarian by Maria Robbins, page 166 Serving Size : 1 Preparation Time :0:00 Categories : Condiments Salads, Dressings Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 teaspoon coarse salt 1 garlic clove -- peeled 4 tablespoons balsamic vinegar 2 teaspoons red wine vinegar 5 tablespoons extra-virgin olive oil 3/4 cup Try to use the best quality balsamic vinegar you can afford If your vinegar is thin and very acid, cut the amount by half. The higher the quality of the balsamic vinegar, the less oil you can use. 1. In a mortar, pound the salt and garlic to a paste. 2. 'Whisk in the vinegars until the salt has dissolved. 'Whisk in the olive. Taste the vinaigrette and adjust vinegar and olive oil to your taste. If the vinegar taste is too strong and you don't want to add more olive oil, whisk in 1 teaspoon water at a time, up to 3 teaspoons.
