A sweet and hot fruit curry provides a welcome change of pace from

vegetarian and nonvegetarian cooking. This recipe is very loosely adapted

from one I found in Harvey Day's The Complete Book of Curries, and I have

found similar recipes in other books dealing with Indian cooking. This is

one of my favorite meals for a winter evening. The short dark days seem to

set off a yearning for the sweet rich flavors of fruits and nuts.

1. Combine the papaya, pineapple, bananas, and apple in a bowl and

sprinkle with lime or lemon juice.

2. In a saute or saucepan, heat the butter or oil over medium heat. Add

the onions and cook, stirring frequently, for 10 minutes, until the onions

start to turn golden brown. Add the chilies, curry powder, ground ginger,

cayenne, and salt. Cook, stirring, for 2 minutes. Add the coconut milk

and cook, stirring, for about 5 minutes.

3. Add the fruit and raisins and simmer gently for 20 minutes. Serve in

bowls over hot rice and garnish with chopped cashews.

Variations You can play around with substituting or adding any number of

other fruit. Try seedless grapes, dried apricots, pears, fresh figs.

You can also play around with adding a vegetable or two to the mix. Try

carrots, peas, sweet potatoes, cubed butternut squash, or pumpkin.
