Guest guest Posted January 25, 2001 Report Share Posted January 25, 2001 * Exported from MasterCook * Papaya Fruit Curry Recipe By : One Dish Vegetarian by Maria Robbins, page 151 Serving Size : 4 Preparation Time :0:00 Categories : Fruits Main Dishes, Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 papaya -- peeled seeded and diced 2 cups diced fresh pineapple OR 1 8-oz can pineapple chunks -- drained 2 bananas -- (not too ripe) peeled and sliced lengthwise and cut into 1-inch chunks 1 large tart apple -- peeled, cored and seeded cut into 1-inch chunks 1 lime or lemon -- Juice of 2 tablespoons unsalted butter or canola oil 2 large onions cut in half lengthwise and thinly sliced 2 small green chilies (serrano or jalapeno) 1 ribs and seeds removed -- finely minced 1 tablespoon Madras curry powder 1/2 teaspoon ground ginger 1/4 teaspoon cayenne -- (or more to taste) 1/2 teaspoon salt 14 ounces low-fat coconut milk 1/4 cup raisins 1/2 cup dry roasted cashews -- for garnish coarsely chopped 4 servings A sweet and hot fruit curry provides a welcome change of pace from vegetarian and nonvegetarian cooking. This recipe is very loosely adapted from one I found in Harvey Day's The Complete Book of Curries, and I have found similar recipes in other books dealing with Indian cooking. This is one of my favorite meals for a winter evening. The short dark days seem to set off a yearning for the sweet rich flavors of fruits and nuts. 1. Combine the papaya, pineapple, bananas, and apple in a bowl and sprinkle with lime or lemon juice. 2. In a saute or saucepan, heat the butter or oil over medium heat. Add the onions and cook, stirring frequently, for 10 minutes, until the onions start to turn golden brown. Add the chilies, curry powder, ground ginger, cayenne, and salt. Cook, stirring, for 2 minutes. Add the coconut milk and cook, stirring, for about 5 minutes. 3. Add the fruit and raisins and simmer gently for 20 minutes. Serve in bowls over hot rice and garnish with chopped cashews. Variations You can play around with substituting or adding any number of other fruit. Try seedless grapes, dried apricots, pears, fresh figs. You can also play around with adding a vegetable or two to the mix.
