Soynut Granola Topping

1 cup assorted pitted, dried fruits (apples,

apricots, pineapple, raisins, and dates)

1/3 cup honey

2 teaspoons soybean oil

1/2 teaspoon almond extract

2 cups old-fashioned rolled oats

1/3 cup wheat germ

1/3 cup oat bran

1/3 cup soynuts

 

Preheat the oven to 350F and line a baking sheet with parchment paper. Coarsely

chop the dried fruits and set aside.

 

In a large mixing bowl, with a wire whip, whisk the honey, soybean oil, and

almond extract together until thoroughly combined. Add the rolled oats, wheat

germ, oat bran, and soynuts, mixing well.

 

Spread the mixture on the baking sheet and cook for 20 minutes. Remove from the

oven. When the mixture has cooled completely, add the chopped dried fruits.

Can be used as a topping on cakes, piies, and ice creams.

 

Description:

wonderful topping for pies and ice cream, yet it can stand alone as an

instant snack or breakfast cereal. "
