Winter Fruit Crisp

5 cups sliced apples

2 cups sliced pears

1 cup unsulphured dried apricot halves

1/2 teaspoon ground cinnamon

1/2 cup apple juice

1/3 cup maple syrup

1/4 cup raisins

1/4 cup dried cranberries

1/4 cup water

1 cup rolled oats

1/2 cup flour

1/4 cup brown sugar -- (packed)

1/3 cup cold butter or reduced-calorie margarine

 

Serves 8 to 10.

 

One of my favorite winter desserts is homemade fruit crisp. Real maple

syrup makes a lovely contrast to the tart fruit.

 

Preheat oven to 350 degrees. Arrange apples, pears, apricots and cinnamon

in lightly oiled 9-by 13-inch baking dish.

 

In a small saucepan over medium-high heat, combine juice, maple syrup,

raisins, cranberries and water. Bring to the boil. Turn off heat and let

stand 5 minutes to plump cranberries and raisins. Add to baking dish.

 

In a medium bowl, combine oats, flour and brown sugar. Cut in butter. Mix

with fingertips or fork until texture of cornmeal. Sprinkle over fruit.

 

Cover with foil. Bake 35 minutes, or until fruit is very soft. Remove

foil and bake 10 minutes longer, or until lightly browned.

Protein 3 g, Fat 7 g, including sat. fat 4 g, Cholesterol 16 mg, Sodium 46

mg, Calcium 37 mg, Dietary fiber 6 g. Diabetic exchanges per serving: 1

1/2 fruit exch., 1 bread/ starch exch., 1 other carb. exch., and 1 1/2 fat

exch.
