Vegetable-Rice Patties With Onion Gravy

Amount Measure Ingredient -- Preparation Method

1 cup coarsely chopped carrot

1 cup coarsely chopped onion

1 cup coarsely chopped red bell pepper

1/2 cup coarsely chopped celery

2 cloves garlic

Vegetable cooking spray

1 cup regular oats -- uncooked

1 cup cooked brown rice

(cooked without salt or fat)

1/2 cup fine dry breadcrumbs

2 teaspoons ground cumin

2 teaspoons dried whole rosemary -- crushed

1 teaspoon rubbed sage

1/4 teaspoon salt

1/4 teaspoon pepper

2 eggs -- lightly beaten

Onion Gravy

(see separate recipe)

 

Position knife blade in food processor bowl; add first 5

ingredients. Pulse five times or until finely chopped.

 

Coat a large nonstick skillet with cooking spray, and place over medium

heat until hot. Add carrot mixture; cover and cook 10 minutes, stirring

occasionally.

 

Spoon mixture into a large bowl. Add oats and next 8 ingredients; stir

well. Divide mixture into 8 equal portions, shaping each into a

1/4-inch-thick patty.

 

Recoat skillet with cooking spray; place over medium heat until hot. Add 4

patties to skillet; cook 4 minutes on each side or until lightly

browned. Repeat with remaining patties. Serve with Onion Gravy.

 

Yield: 4 servings (about 285 calories per 2 patties and 1/4 cup gravy).
