Vanilla Soaked Fruits

Amount Measure Ingredient -- Preparation Method

1 cup sugar

2 cups water

1 vanilla bean -- split and scraped

4 halved and seeded fruits ( apricots,

peaches, nectarines, small apples, plums

or pears are suitable )

 

Place the sugar, water and vanilla bean in a saucepan and stir over

low heat until the sugar has dissolved. Add the fruit and poach

gently over low heat for 5 minutes until the fruit is soft.

 

Serve in deep bowls with syrup and garnish with vanilla ice cream or

yogurt.
