Spaghettii with Lime and Rocket

Amount Measure Ingredient -- Preparation Method

14 ounces spaghetti

2 tablespoons extra virgin olive oil

1 tablespoon grated lime rind

2 cloves garlic -- crushed

1 red chili pepper -- seeded and chopped

2 tablespoons capers -- rinsed

5 ounces Rocket -- shredded

3 tablespoons lime juice

5 ounces marinated feta cheese in oil

 

Cook the spagettii in a large pot of boiling water until al dente.

Drain.

 

While the spagettii is cooking, heat the oil in a large saucepan over

medium heat. Add the lime rind, garlic, chili and capers and cook 1

minute or so until fragrant. Add the spagettii and toss to heat

through.

 

Serve tossing the rocket and lime juice through the pasta and tope

with the marinated feta.

NOTES : This unusual and zippy pasta is from a beautifully

illustrated Canadian book I bought in BC in December. I have

converted the metric measures, and removed the proscuitto, otherwise

it is unchanged from the original recipe. Rocket may be known in the

USA as argula. Here in Europe, feta cheese is sold plain or

maninated in oil containing herbs such as oregeno, garlic and

sometimes red pepper. You can " fake " this by marinating some in

olive oil with herbs for about 24 hours ( in the refirgerator ) if it

is not available in your area.

Rocket (or roquette) is another name for arugula. According to _Eat Fresh,

Stay Healthy_ (1997 - by Tony Tantillo and Sam Gugino, Macmillan Press):

 

" Arugula, also called rocker or roquette, has notched leaves that look

somewhat like dandelion. It may be nutty and peppery in cooler weather and

become more pungent and 'hotter' in warm weather. " They list it as a salad

green. It's also nice seared with some fresh garlic in olive oil, then

tossed with cooked pasta as a side dish.
