Chocolate Layer Soy Cake with Chocolate Soynut Butter Frosting

1 cup whole wheat pastry flour

1/2 cup soy flour

1 tablespoon baking soda

1 cup sugar or light granuulated cane juice

1/2 cup unsweetened cocoa powder

1 1/2 cups whole soy milk

1 tablespoon vegetable oil

1 teaspoon vanilla extract

2 1/2 cups Chocolate Soynut Butter Frosting

1/4 cup chopped soynuts

 

Preheat the oven to 350F and grease an 8-inch round cake pan.

 

In a large bowl, combine the whole wheat pastry flour, soy flour, baking soda,

sugar, and cocoa and set aside.

 

In a separate bowl, combine the soy milk, vegetable oil, and vanilla until

smooth. Pour the soy milk mixture into the flour mixture, stirring with a wire

whisk until well combined.

 

Pour the batter into the greased pan and bake for 30 minutes, or until the cake

springs back when touched. Cool completely.

 

Remove from the pan and frost with the Chocolate Soynut Butter Frosting.

Sprinkle with the soynuts and serve.
