I adapted a meaty shephards pie into a soy shephards pie. Came out pretty

good. Tasty. You can change the seasonings if you wish. We thought it was a

bit salty so the next time I make it I will lower the salt quite a bit.

Otherwise it was good.

Soy Shephard's Pie

Amount Measure Ingredient -- Preparation Method

1 recipe Instant mashed potatoes

1 cup TVP " beef " flavor chunks

1 cup boiling water

1 onion -- chopped

1/2 cup carrots -- sliced

2 tbsp all-purpose flour

1 tsp salt -- divided

1/2 tsp pepper -- divided

1 tsp garlic powder

1 cup " beef " broth

1/4 cup egg substitute

1/2 cup cheese -- shredded

 

Cook potatoes according to package directions. Set aside.

 

Pour boiling water over TVP in a large bowl. Cover and let stand until

reconstituted, about 20-30 minutes. Drain well.

 

Heat a nonstick skillet over medium-high heat. Cook TVP and onion for 4

minutes until onion is translucent and TVP is a bit browned. Add carrot and

saute for a few minutes to soften them.

 

Stir in flour, 1/2 tsp salt and 1/4 tsp pepper. Add broth, and cook,

stirring constantly, until slightly thickened. Spoon mixture into a lightly

greased baking dish (should be 11x7 inch).

 

Stir together the potatoes, egg sub, garlic powder, remaining salt and

pepper. Spoon over TVP mixture.

 

Bake at 350°F for 25 minutes. Sprinkle with cheese, and bake 5 minutes

longer.
