I am way ahead of you on this and it is tough because I also avoid dairy. I

have learned to use turnips and daikon radishes a lot more to replace

potatoes (I still do red potatoes). Either one of them go well in soups and

stews. I also steam them and mash them. To replace bread, well, that is

tough. I just have not eaten it in so long I don't miss it any more. I do

like to do lettuce wraps to get my sandwich eating. I eat a lot more of the

various squashes, like spaghetti squash and butternut squash. My favorite

recipe for butternut squash as a breakfast meal is simply to bake the squash

till soft. The in the blender, grind some pecans to a meal and add water to

make a milk. Then I scoop out some of the cooked squash and add it to the

pecan milk and blend it to the consistency of very thick whipped cream.

Place that thickened cream back on top of the rest of the cooked squash. It

is yummy.

 

Anyway, I use a lot more ground nuts to substitute for grains in recipes. I

stick to smaller diameter beans as they are lower in carbs. And by using

more greens and green veggies and fewer of the sweet vegetables, like

carrots, I further cut down on carbs. Same with fruits. I stick close to

grapefruit, lemon, cranberries, all berries, and apples. Oh yes, and avoid

juices. They are high carb and they also have a high glycemic index which

is part of the problem with high carb diets. You are also supposed to add

more good oils to your diet when you are doing a low carb diet. That is

nice. It is tough to do low or lowered carb and be vegetarian, but not

impossible. And, yes, it is true that my cravings have diminished on a low

carb diet. Every time I start adding more carbs in again, I start binging.

 

That is the basics. I can provide some recipes if you want to get specific

about what you are looking for. (it seems I have searched through

millions).
