Jumbo Gingerbread Cookies

2 1/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1/4 teaspoon ground cloves

3/4 teaspoon ground cinnamon

2 teaspoons ground ginger

1/2 cup unsalted butter -- softened

(1 stick; see note)

1/4 cup solid vegetable shortening -- cold

1/2 cup granulated sugar

1/4 cup sugar -- for coating cookies

1/2 cup firmly packed light brown sugar

1 egg

1/4 cup unsulfured molasses

 

Preheat oven to 325 degrees. Line 2 baking sheets with parchment paper or

heavy aluminum foil.

 

Sift together flour, baking soda, salt, cloves, cinnamon and ginger; set aside.

 

Using an electric mixer on medium speed, beat butter, shortening,½cup

granulated sugar and brown sugar in large bowl about 1 minute, until

smooth. Add egg and molasses, and mix on low speed about 30 seconds until

blended thoroughly. On low speed, add flour mixture and mix until

incorporated and a thick, smooth dough forms.

 

Using 1/4 cup dough for each cookie, roll dough into 2-inch balls, then

roll each ball in remaining 1/4 cup sugar to coat. Place balls about 3

inches apart on prepared baking sheets.

 

Bake 1 sheet at a time on middle rack about 22 minutes until tops are light

brown, reversing baking sheet after 12 minutes. (Cookies will flatten and

cracks form on top toward end of baking time.) Bake second pan of cookies.

Cool cookies on baking sheet 5 minutes before transferring to wire racks to

cool completely.

 

Note: Use real butter or stick margarine. Do not substitute reduced-fat

spreads; their higher water content often yields less-satisfactory results.
