Double Chocolate Fantasy

24 ounces soft tofu

3/4 cup honey

1/2 cup cocoa powder

3 teaspoons vanilla extract

1/2 cup semisweet chocolate chips

1 ready-made graham cracker pie crust

OR

10 pudding cups

 

In a blender, whip the tofu until smooth.

 

Heat the honey for 90 seconds in a microwave, or several minutes on the stove.

 

In a large mixing bowl, pour the honey over the cocoa powder, and stir until

well-blended.

 

Add the vanilla.

 

Pour the tofu into the bowl and stir for several minutes until creamy.

 

Fold in the chocolate chips, distributing them evenly.

 

Pour the mixture into a pie crust or pudding cups, and refrigerate for

approximately 1 to 2 hours.

 

Garnish with more chocolate chips or a flourish of fresh banana slices
