Lee Evans & Chris Rankin Serving Size : 10 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 12 ounces firm tofu 2/3 cup sugar 2 tablespoons maple syrup 1/4 cup warm water 1/4 cup vegetable oil 1 tablespoon vanilla extract 1 tablespoon apple cider vinegar 1 3/4 cups flour 3/4 cup unsweetened cocoa powder 1 teaspoon baking powder 1 teaspoon baking soda 1/8 teaspoon salt 1 cup fresh raspberries Raspberry Topping 1 cup fresh raspberries, plus extra for garnish 2 tablespoons chocolate syrup In a blender, puree the tofu until smooth. In a large mixing bowl, combine the tofu with the sugar, maple syrup, water, oil, vanilla, and vingar. Stir vigorously until creamy. In a separate bowl, mix the flour, cocoa, baking powder, baking soda, and salt. Slowly add the dry mixture to the large bowl. Mix just until blended. Pour the batter into a lightly oiled baking pan, and bake at 350F for 30 to 35 minutes, or until the cake feels springy to the touch. Remove from oven and cool. In a blender, puree the fresh raspberries. Strain the berries through a wire strainer or cheesecloth to remove the seeds. Combine the raspberry puree and chocolate syrup in a small mixing bowl, stirring until very smooth. Pour the topping over each individual serving, and garnish generously with fresh raspberries. Judy's note: I think it was a misprint for the ingredients for the cake to include fresh raspberries, but raspberries would be good in the cake. Description: " Luscious. Sumptuous. Sinful.
