Coincidentally, this week's cookbook of the week, " Plenty " , was featured in the

Spring issue of Veggie Life. I formatted the recipes from that feature. Here's

the first:

Ash and Sarah's Chai Tea

 

Recipe By :Plenty, A Collection of Sarah McLachlan's Favourite Recipes, with

Amount Measure Ingredient -- Preparation Method

4 cups water

1 large cinnamon stick -- or 1/2 tsp ground cinnamon

1 1/2 teaspoons ground cardamom

1 teaspoon fennel seeds

2 whole cloves -- (to 3)

1/8 teaspoon powdered ginger

1/8 teaspoon amchoor -- (optional) see note*

4 tea bags -- black tea or your choice

2 cups whole milk -- (to 3 cups)

sugar to taste

 

In a saucepan, combine water, cinnamon, cardamom, fennel seeds, cloves, ginger,

and amchoor, if using. Bring to a boil Reduce to a simmer and add tea bags.

Allow to steep until desired strength is achieved. Remove tea bags.

 

Stir in milk and bring to a simmer. Add sugar to taste or serve unsweetened.

Strain into a pitcher or tea pot. Serve hot or cold.

NOTES : * amchoor or mango powder -- a powdered seasoning made from dried green

mangoes. Used in East Indian cooking. Available at Indian markets.

 

If there's one thing she's learned about chai, Sarah says, it's that " everybody

makes it a bit differently. This recipe is one that my husband, Ash, and I have

worked on for a while. Once you get the basics down it's fun to experiment. "

(Editor's note: Try it with full fat plain or vanilla soy milk for a vegan

version.)
