Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 pounds sweet cherries -- pitted (dark) 3 tablespoons sugar -- up to 4 tablespoons 3 cups water -- plus 3 tablespoons; divided 12 whole cloves 6 whole cardamom -- (pods) 1 large cinnamon stick -- broken into pieces 1 1/2 tablespoons cornstarch nutmeg -- freshly ground as garnish 4 tablespoons fat-free sour cream Combine cherries, sugar, and 3 cups water in medium saucepan. Tie spices in cheesecloth bag and add to saucepan. Heat to boiling; reduce heat and simmer, covered until cherries are tender, 15 to 20 minutes. Remove from heat and cool to room temperature. Discard spices. Process soup mixture in food processor or blender until smooth. Strain, discarding cherry skins. Return soup to saucepan and heat to boiling. Mix cornstarch and remaining 3 tablespoons water; whisk into boiling soup. Boil, whisking constantly until thickened, 1 to 2 minutes. Cool; refrigerate until chilled. Pour soup into bowls; sprinkle lightly with nutmeg and top each with a tablespoon of sour cream. 4 first-course servings (about 1 cup each).
