Hot Mustard Marinade

Recipe By : Vegetarian Cooking for Everyone, Deborah Madison, page 597

Serving Size : 1 Preparation Time :0:00

Categories : Sauces And Marinades Soyfoods

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

2 teaspoons minced garlic

2 teaspoons grated onion

3 tablespoons hot mustard

1/2 teaspoon cayenne

3 tablespoons roasted peanut oil

3 tablespoons balsamic vinegar

OR Chinese black rice vinegar

1 1/2 tablespoons unsulfured molasses

Makes about 3/4 cup.

Hot, spicy, and a little sweet. The molasses makes a rich caramel glaze,

especially on tempeh.

Combine the ingredients, then brush over sliced, drained tofu or steamed

tempeh. Both can be sauteed, broiled, or baked, and the marinade used as a

sauce.
