Kathleen * Exported from MasterCook * Marinated Tofu Sandwich Recipe By : Vegetarian Cooking for Everyone, Deborah Madison, page 130 Serving Size : 1 Preparation Time :0:00 Categories : Sandwiches Soyfoods Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 block Chinese-style firm tofu drained or frozen Hot Mustard Marinade (see separate recipe) 1 tablespoon vegetable or canola oil Bread -- toasted Mustard and mayonnaise Lettuce and tomato Chopped cilantro Makes 3 or 4 sandwiches This has gutsy character - especially for tofu - and the marinade is also good with tempeh. Tofu that's been frozen and thawed develops a porous texture that really soaks up the marinade. Cut the tofu into 4 to 8 slices, place in a pie plate and cover with the marinade. Marinate for as little as 15 minutes or as long as a few days if refrigerated. Heat a little oil in a non-stick pan, add the tofu slices, and cover the pan. Don't worry about scraping off the marinade - it makes a glaze as it cooks. Fry over medium-high heat on both sides until browned. Add more of the marinade to the pan if it seems dry. When done, set the tofu on toast, spread with mustard and mayonnaise, and cover with lettuce, tomatoes, and cilantro.
