Chocolate Almond Pie

12 ounces soft tofu

3/4 cup sliced almonds

1 cup brown sugar

1 cup unsweetened cocoa powder

1 teaspoon almond extract

1 teaspoon unflavored vegetarian gelatin

1 9-inch graham cracker crumb pie crust

 

Spread the sliced almonds on a baking sheet, and bake at 350F for 5 to 10

minutes. You only want them to brown slightly, so watch to make sure they don't

burn. Set aside to cool.

 

In a blender, puree the tofu until smooth. Add the brown sugar, and continue

blending.

 

Add the cocoa, almond extract, and gelatin, continuing to mix until creamy.

 

Pour the mixture into the pie crust, sprinkling the almond slices on top for

garnish.

 

Refrigerate overnight. Serve chilled.

 

Tip: For even more almond flavor, add a splash of amaretto liqueur during the

blending process.
