Lee Evans & Chris Rankin Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Pie 12 ounces soft tofu 2 cups canned pumpkin 1 cup brown sugar 1 teaspoon ground cinnamon 1/2 teaspoon ground ginger 1/4 teaspoon ground nutmeg 1/4 teaspoon ground cloves 1 9-inch graham cracker crumb pie crust Topping 1/4 cup brown sugar 2 tablespoons all-purpose flour 2 tablespoons cold margarine or butter 3/4 cup chopped walnuts In a blender, mix the tofu, pumpkin, brown sugar, and spices until smooth. Pour the mixture into the pie crust, and bake at 425F for 15 minutes. Remove from the oven, and lower the temperature to 350F. In a small mixing bowl, combine the brown sugar and flour, slowly cutting in the butter or margarine until crumbly. Stir in the walnuts. Sprinkle the topping over the pie, and return it to the oven for 40 minutes. Description: " The addition of a sweet and crunchy topping to this classic will make this your new standard recipe.
