Tofu Key Lime Pie

12 ounces soft tofu -- mashed

1 cup ricotta cheese

1 14 oz can sweetened condensed milk

1/2 cup freshly squeezed Key lime juice (about 8

limes)

1 tablespoon unflavored vegetarian gelatin

1 9-inch graham cracker crumb pie crust

 

In a blender, combine the tofu, ricotta, and condesed milk, and mix until

smooth.

 

In a saucepan, combine the lime juice and gelatin.

 

Cook the mixture over low heat for several minutes, stirring constantly, until

the gelatin has dissolved.

 

Add to the tofu mixture, and mix well.

 

Pour the filling into the pie crust, and refrigerate for at least 3 hours.

 

Garnish each slice with a thin slice of lime.
