Guest guest Posted January 19, 2001 Report Share Posted January 19, 2001 * Exported from MasterCook II * Cheese Bread - Le Marche Recipe By : Italian Vegetarian Cooking/Paola Gavin Serving Size : 1 Preparation Time :0:00 Categories : Breads Italian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 package active dry yeast 1 cup warm water (105-115 F) 3 cups unbleached white flour, approximately 2 eggs 2 tablespoons olive oil 1/2 cup freshly grated Pecorino cheese 3 ounces Gruyere cheese -- cut into small dice 1/2 teaspoon salt Dissolve the yeast in the warm water in a large mixing bowl. Let stand for 10 minutes until the yeast is dissolved and the mxiture is light and creamy. Fold in 2 cups of the flour and beat until the dough forms a sticky mass. Cover with plastic wrap and let dough rise in a warm place for 1 hour, or until it has doubled in bulk. Beat together the eggs, olive oil, the cheeses, and salt and beat into the raised dough. Sprinkle some of the remaining flour onto a work surface or large board and turn the dough out onto it. Gradually knead in remaining flour until the dough is smooth and elastic and no longer sticks to your hands. Place in a well-oiled loaf pan. Cover with plastic wrap and let rise in a warm place for 1 1/2 hours, or until doubled in bulk. Bake in a preheated 400 F oven for 35 to 45 minutes, or until the top is golden.
