Lee Evans & Chris Rankin Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 12 ounces soft tofu -- cruumbled 2/3 cup frozen orange juice concentrate -- thawed 3 tablespoons vegetable oil 1 teaspoon vanilla extract 1/2 teaspoon salt 1 cup sugar 1/2 cup unbleached white flour 1 teaspoon baking powder 1/4 teaspoon baking soda 2 tablespoons grated orange rind Serves 8 to 10 In a blender, combine the tofu, juice concentrate, 2 tablespoons of the oil, vanilla, and salt, and mix until creamy. In a mixing bowl, stir together the sugar, flour, baking powder, and baking soda. Slowly add this mixture to the contents of the blender, and mix until smooth. Pour the mixture into a well-oiled and floured 9 1/2 x 13-inch pan, and bake at 400F for about 30 minutes. Slice with a sharp, wet knife to serve. Garnish with grated orange peel.
