Guest guest Posted January 17, 2001 Report Share Posted January 17, 2001 * Exported from MasterCook * Emerald Fried Rice Recipe By :Stir Fries by Jodie Warner, pg. 68 Serving Size : 4 Preparation Time :0:00 Categories : Asian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons vegetable oil 2 cloves garlic -- chopped 1 tablespoon ginger -- minced 1 rib celery -- julienned 1/2 green pepper -- seeded and chopped 12 snow peas -- julienned 1/2 cup peas 3 scallion -- shredded 4 cups rice -- cooked 1/2 teaspoon salt 1/2 teaspoon sugar 2 tablespoons oyster sauce Cook rice and set aside. Heat oil in large wok on high; add garlic, ginger, green pepper & celery. Stir fry for 30 seconds. Add snow peas, peas and green onions. Cook another 30 seconds. Add rice ( breaking up lumps with hands before adding ) Cook for one minute or until heated through. Add salt, sugar and oyster and continue tossing until combined.
